Tasting Notes

Sight: Dark red-purple colour.
Smell: Complex nose with notes of plums, cherries, liquorice, vanilla, and cocoa.
Taste: Full-body structure with firm, rounded tannins as well as hints of cherry and toffee on the finish.
Food pairing: Ideal with Wagyu Sirloin steak.
Best served: Serve at the range of 14 ºC and 16 ºC.
Aging potential: 10 years.

Origin

Trellis System: Pergola.
Soil: deep, clay loam texture with colluvial granite produced by erosion of the hill.
Climate: warm temperate with a Mediterranean rain regime, very cool springs, very warm summers and mild winters; large temperature differences between day and night and constant afternoon breezes from the coast.

Winemaking

Harvest: hand-picked, with double selection in the vineyard, at the end of April.
Fermentation: maceration of 25-30 days, including prefermentative maceration for 48 hours. Fermentation started with active dry yeast
(Bayanus) between 26 ºC and 28 ºC.
Aging: 18 to 24 months in new French oak barrels.
